We are hiring a Sous Chef at our Urban Fare location in Vancouver, BC (Yaletown)

You will be responsible for:

  • Leading a team, acting as a coach, mentor, and resource to team members
  • Participating and actively leading the production and service for the Restaurant in a set station (prep/production, service case, HMR, Cappuccino Bar).

KEY RESPONSIBILITIES

  • Hands-on Chef working the line in the head position, cooking, plating and overseeing the line (Min 3 nights per week, incl. Fri & Sat.)
  • Submit cost proposals for menu items
  • Design standardized food presentation guidelines for each dish
  • Monitor inventory levels of commonly used items
  • Look for ways to reduce spoilage of infrequently used items.
  • Hire, train, and manage staff about proper kitchen sanitization methods
  • Always ensuring complete guest satisfaction, at an excellent level
  • Ensuring positive morale and upstanding ethics of your managers and crew
  • Provide ongoing motivation, coaching, and effective leadership development of kitchen staff
  • Oversee and ensure general maintenance and cleanliness of the kitchen area are always maintained

QUALIFICATIONS & EXPERIENCE

  • 3 or more years experience working as a Head Chef
  • Ability to track expenses and manage a budget
  • Ability to lead and inspire a team
  • Strong passion for the art of food design
  • Culinary Degree or equivalent experience is an asset
  • Ability to delegate and follow-up
  • High level of organizational and communication ability
  • Complete understanding and belief in the company’s philosophy and goals of quality and improvement

Plan menus and ensure all food coming out of kitchen meets quality standards. Ensure food and labour costs are consistently in line. This Job has an expectation of approximately 44 hours per week.

Weekly ordering and monthly inventories. Being proficient on optimum control is an asset.

Personal Suitability:

You must be an idividual who can remain calm at all times. Must be proficient in butchering, food preparation, expert plate presentation along with maintaining records of food costs, rotation, sales and inventory. Fast paced environment, must be able to work under pressure. Physically demanding, attention to detail. Combination of walking and standing for extended periods.
